There are several varieties of wheat flour. Top-grade flour is white and there is almost no bran. It is usually used in butter baking, but it also serves as a thickening agent for sauces. The first-grade flour is the main ingredient in bread baking. The second-grade flour is also used for bread baking, it contains up to 8% of bran. Another variety of flour is the whole-wheat flour – a very popular variety for healthy eating.
